In my last blog, How the Faster Way to Fat Loss plan has changed My Mental Mindset I mentioned how pre-planning meals turned out to be a massive help in keeping me on track with my journey in the Faster Way to Fat Loss program (FWTFL). It's taken a little experimentation to find easy low-carb recipes that fit for our family, and honestly, some of them my kids will never be fans of, but those are some of my favorites, so I continue to include them in my meal prep. I'll share them all here.
But first, let me talk about a few scores I've invested a lot of time researching to find an alternative that fits within the FWTFL plan yet still makes me happy. I have this weird little combo I've always loved. Before I transitioned to a healthier lifestyle, it looked like this. A bagel, two hard-boiled eggs, veggie cream cheese, and pepper. I struggle to get enough protein and fats, and while the FWTFL plan suggests eliminating dairy, I still eat it occasionally. So to get my fix, I found these really, really good bagels by Thin Slim on Amazon. They toast well and are great un-toasted too. They are the best brand I've tried so far. You can click HERE to find all of our healthy family favorite products. I love lettuce wraps, but I realized that I sometimes just have a craving for a regular sandwich. Thin Slim also makes bread, and the Everything Bread is my favorite. Both the bread and the bagels have zero net carbs if you are on a low carb day. If you have a Costco membership, I just scored not only low carb bread but hamburger buns by Natural Ovens. Both are delicious and only have one net carb. Our Go To Recipes-Easy PeasyMama's ChickenSo let's get down to the good stuff. Some of my top favorite recipes to try on the Faster Way to Fat Loss Plan. And trust me they are all FAST AND EASY! The first entree was just an experiment that turned into a favorite. I had a bad experience in 1993 with chicken and recently started to integrate it into my diet. So when I tried this recipe with the fam, the kids said, "Mom, this is the best chicken I have ever had," and shockingly, I loved it too. One package Free Range thin cut chicken breasts Everything Bagel Season (We get ours at Trader Joe's) Tony Chachere's Original Creole Seasoning (It's one of my son Landon's favorite's so I knew I couldn't go wrong) Lemon Juice Fresh Parmesan Cheese Avocado, Coconut, or Extra Virgin Olive Oil
The Pampered Chef Grill Pan's benefit is the cast iron "lids" that sit right atop what you are grilling, sealing in the flavors. It may be why they were so fabulously received.
Cabbage Rolls
I am obsessed with cabbage and have tons of recipes I have tried on our Pinterest board "Eat Clean" if you, like me, love cabbage. Check them out!
These cabbage rolls are so easy, and I like to make them ahead and freeze them. I found these disposable 8x8 baking pans that store well in the freezer that I use for all my freezer meals. Annie from maebells.com has a fantastic recipe I suggest you try. You can find it HERE.
Egg Salad
I realized having egg salad on hand helps me get my proteins in and is a great snack. I prefer it served on a bed of lettuce, but it's yummy on toasted low-carb bread too! 8-10 hard-boiled eggs peeled and chopped 1/4 cup chopped onion 3/4 cup Avocado mayo 2 Tbs dill relish 1/2 tsp paprika 1/4 tsp salt 1/2 tsp pepper a dash of cayenne Mix all ingredients and store in an airtight container.
And while we are on the topic of eggs, you must try this No crust Caprese Quiche from Wholesome Yum. I like to eat this for breakfast, lunch, and dinner!
Here is another fantastic resource we love!
Low-Carb Meatballs
These low carb meatballs from Linda at southernkissed.com are a hit at our house. I make several dozen and freeze them to quickly add to zoodles or to eat on their own.
I've tried several recipes and these are hands-down the best I've experimented with. Poodle Doodles--Say what?
I stumbled across this recipe on Pinterest from Sara at mymontanakitchen.com and it made me giggle. My daughter Rayah loves to bake, I do not! So I asked if she would test the recipe for me. She takes her test kitchen responsibilities seriously so I knew she was my go to girl. She did raise an eyebrow when I told her what they were called but she made them for me just the same and WOW were they amazing. The freeze perfectly and Rayah loves to pack them in her lunch each day.
Cream Cheese Stuffed Peppers
It almost too simple to share but I find myself struggling for varying snacks I can grab and go and this one is so yummy and filling. Two ingredients packed full of flavor are the perfect to-go snack at our house. Demi prefers the small varying colored peppers as they hold the cream cheese well and travel better. Simply grab a knife, slice the peppers, scrape out the seeds and stuff them with your favorite cream cheese. Voila!
We hope you enjoy trying some of our easy go-to family favorite recipes with your family. As always, we love to hear from you. Comment below, share your photos or follow us on your favorite social media platform.
